Crazy Rich Chocolate is the cake we make when there is no reason to hold back. Layers of dark, tender chocolate sponge are filled and covered with real couverture chocolate for a flavour that is bittersweet and full rather than simply sweet.
Couverture carries a higher cocoa butter content than ordinary compound chocolate, which is what gives this cake its clean snap, its shine and that slow melt on the palate. It is a heavier, denser cake by design – a little goes a long way.
