Description

Baked hot and fast until the top caramelises almost to black, the Basque cheesecake has no crust and a centre that stays soft and just-set. The bitterness of the caramelised top is the whole point.

Add chocolate ganache with berries if you want a celebration version, or keep it plain to taste the cheesecake itself. Both are baked to order and delivered chilled.
